Cooking for One

Here is a little something I make when I get home from work and want something that feels indulgent yet isn't as bad for you as you think..Barbecue Chicken Flat Pizza

Here's how to do it:

*Take one wrap that you usually use to make lunch and place it on a cookie sheet.

*Spread 2 tablespoons of barbecue sauce on the wrap.

*Thinly slice a red onion and spread the pieces around the pizza.

*Use deli sliced chicken (or even turkey) and tear it into small pieces and spread.

*Add a tablespoon of shredded cheddar cheese (Weight Watchers makes individually measured portion packets for those trying to be really healthy)

*Bake in oven for about 15 minutes (or until crispy to your liking) on 350/375 degrees.

Easy, fast, and delish. Enjoy!

I've made Greek pizzas like this before. Same basic concept but using diced tomatoes, sliced black olives, feta cheese, and all that good stuff. Super easy, quick, and perfect for one!
